Small head of iceberg lettuce, washed and torn into pieces2 Sticks celery, chopped1 bell pepper, chopped1 (10 oz.) package frozen peas, defrosted1/2 medium red onion, chopped4 Tablespoons mayonnaise4 Tablespoons extra virgin olive oil1 Tablespoons sugar4 Tablespoons grated Parmesan cheese2 Tablespoons grated cheddar cheese8 slices bacon, fried crisp and crumbled

Ingredients2 tablespoons olive oil

6 parsnips, peeled and roughly chopped

2 carrots, peeled and roughly chopped

1 cup chopped onion

1/2 cup chopped celery

salt to taste

1pint chicken stock

1 bay leaf

1/2 cup apple cider

freshly ground black pepper

pinch ground nutmeg


1. In a soup pot, heat the oil over medium-high heat. Add the parsnips, carrot, onion, celery and a pinch of salt. Cook, stirring occasionally, until the vegetables soften, about 8 minutes.2.  Continue reading »

Tomato Bread
Ingredients8 French bread slices, cut sharply on the diagonal into 1/2″ thick slices4 cloves garlic, cut in half widthwise2 large very ripe tomatoes, choppedExtra virgin olive oil (preferably Spanish)a small bowl of coarse sea salta small bowl of freshly ground black pepper
Method1. Preheat the grill to medium-high. Grill the bread slices until crisp and nicely browned, 2 to 4 minutes per side. 2. Rub each slice of bread with the cut garlic, then with the cut tomato.  Continue reading »
