I was in the Bean an Ti café a few weeks for a coffee and noticed a chocolate & strawberry choux ring. Having never made choux pastry before, I decided it was about time I tried and what would be nicer to make than a chocolate & strawberry choux ring? Now I know strawberries aren’t in season and everyone says they have to travel thousands of miles to get here in the Winter and completely lose their flavour by the time they do, but I beg to differ! Crispy potato skin, filled with spinach, Dublin Bay prawns, Irish smoked salmon and glazed with Hollandaise sauce.
This recipe is a nice and simple starter, that I was use to serve in the restaurant. I have to say, it was a the customer’s favourite. So, this is how it goes:
Ingredients for 4 people:
4 medium size, rooster potatoes.
12 large Dublin Bay prawns.
4 tomatoes.
200g cooked and pressed spinach.
50g Irish smoked salmon.

London 2 weeks ago in Gordon Ramsey Claridges, Killarney last week for some brilliant home cooking and then back in Dublin this weekend for a trip to restaurant Patrick Guilbaud(http://www.restaurantpatrickguilbaud.ie/). Patrick Guilbaud is the only restaurant in Ireland currently with 2 michelan stars and rumour has it that it is trying for its third. As mentioned in a previous post, 4 friends met up last weekend in Killarney in order to imbibe the finest wines and consume the finest foods, all mixed in with a fair amount of craic (the Irish kind, not the bad kind). Digital Media Awards Shortlist

I received a phone call yesterday to advise me that Ice Cream Ireland has been shortlisted for the 2008 Digital Media Awards in the blogging category. It seems like the ice cream man will need to procure a tux for the event in Dublin (Feb, 2008). I’d be much more comfortable in an old jumper!
