Sauce verte

The sauce verte or green sauce, has often labelled other green sauces, such as the Spanish green mojo or Mexican salsa verde. This recipe is based on classic French cooking traditions and also is the most widely used.

Recipe for 12-15 people:

40g baby spinach leaves.

40g watercress leaves.

20g flat parsley leaves.

20g chervil leaves.

20g tarragon leaves.

4 egg yolks.

6 dl vegetable oil.

1 tablespoon of good tarragon vinegar.

8g salt.

1 good pinch of freshly ground pepper.  Continue reading »

SUPER STARTER, SUPER MEAL

at the KILLUMNEY INNYou won’t be hungry leaving the Killumney Inn. Trouble is you could be full before the finish.
Take the potato wedge starter for instance. It is a huge dish. Better shared. It is quite nice too, the potato served with bacon and topped with cheese.
Main course was baked rack of lamb in a red wine sauce, served with a selection of vegetables, mashed potato and chips.  Continue reading »

Talk about washed out of it… The weekend was just horrible weatherwise. Foodwise and rugbywise, not so bad due to a smashing win for Munster and lots of great meals enjoyed. I’ve no recipes for you as the recipe that I wanted to try out was a complete disaster and made way for one of my blondest moments so far – more to follow.

I am enjoying making recipes out the new Bill Granger cook book. One of the most successful recipes I tried this week was a recipe for roasted pumpkin with cumin and cayenne pepper but unfortunately there seemed to be a pumpkin/squash drought and so I plumped for sweet potato instead.The combination of the soft luscious sweet potato, the salty cheese and olives and the sharp shallot dressing was to die for. All right, just a quick one before I go. Some of you will already have had a go at the 2007 vintage of Brightwater Vineyards’ Sauvignon Blanc, from Nelson, New Zealand.
Before it arrived, Valley Neale wrote to describe its
highly aromatic… very intense, what we refer to as a sweat or matchstick
character. This particular character is a real highlight of Sauvignon Blanc

Gordon’s Cookalong Live Video

With TV becoming saturated with Cookery programmes C4 and Gordon Ramsey tried a new format tonight with the live cookalong. After watching it (without cooking along) i must say i was a bit underwhelmed. I think they make the cardinal mistake of trying to give Gordon a script which is a big mistake as we all know how witty and precise he is with his comments off the cuff. Quite a lot of his jokes had been pre written and it just doesn’t suit his style at all.  Continue reading »
