Noemi is from Hungary and moved to Ireland three years ago.  They weren’t happy with the job situation and decided to go out on their own.  They went to a franchise show and selected Reserve a Car.  They target tourists coming to Ireland and are basically car brokers.  They have recently launched a Reserve a Ticket service, which allows tourists to buy all their tickets (events, concerts, train etc.) in one place.  Continue reading »

I’m afraid this is a bit of a cheat. On Sunday we celebrated the fact that LB walked away from the Men’s National Gymnastics Championship sporting a Bronze Medal awarded for the U12 Level 3 category of gymnastics.
Not only did he do himself proud; but he also contributed to a total of eight medal’s awarded to young gymnast’s associated with Leonard’s School of Gymnastics. This is a tribute to Leonard’s fine gymnastic coaching skills and to the club generally.  Continue reading »

Before I went to France my Dad got some duck legs on sale and I decided to get in the French mood by making Cassoulet!! My whole family has become a little (or a lot) obsessed with duck, which is fine by me obviously as I love it the most!!

Maria Walsh from The Monogram Shop is sharing her bsuiness experiences with us.  She owned a retail shop that was very successful, but in 2002 she was diagnosed with throat cancer and had to suspend her business.  With a 25% chance of survival and the chance of losing her voice if she did survive.  Her experience changed her life considerably.  After recovery she thought her business was a closed chapter.  Her focus was on family.  Her customers urged her to return to the business.  Eventually she decided to go back to the business but to run it virtually from her home.  Continue reading »

I am attending the Irish Business Women Annual Conference today.  I will be live blogging the events, speakers and key points.
We had a wonderful informal networking meeting last night.  As a foodie I have to say I was incredibly impressed with the hors d’oeuvres.  Not a cocktail sausage in sight!  Foie Gras pate, deviled eggs, satay chicken, goats cheese and relish and chocolate covered strawberries.  Absolutely fabulous!  Excellent company to boot.  Continue reading »

Gooseberry & Elderflower Fool

Serves 6

Tart gooseberries are the first true fruit of summer and are complemented by the scent of elderflowers, which bloom at the same time. We find 1 litre tubs to be perfect for picking soft fruits into. The fruit can be used straight away or the lid put on, labelled and popped into the freezer. We freeze 1 litre tubs of gooseberries with elderflower heads in with them to make this fool in the winder. Any that are left over in the freezer are made into jam after the flower stalks are removed.

Gooseberry and Elderflower Fool

  • 850 ml gooseberries
  • 4-6 elderflower heads
  • 50 ml water
  • 6 tbsp sugar
  • 270 ml cream

Put the gooseberries, elderflower heads, water and sugar into a saucepan. Count the flower heads as they go into the pan so that you can fish out all the stalks when the gooseberries are cooked. Bring the pan to the boil and simmer the gooseberries for 15-20 minutes, until soft. Taste the gooseberries and add more sugar if needed. Leave to cool.

Whip the cream until it is just gone past floppy, but not stiff. Fish the elderflower stalks out of the gooseberries and gently fold the gooseberries into the cream.
