
I’m just back from France, where I mixed a little business and pleasure. Well, for me France is always a pleasure.
One thing that struck me is that for all the talk of Ireland being expensive, I think it’s a bargain compared to France. Hotels, meals, ice cream – everything cost more, especially on the higher end.

Yes, it’s summer, it’s f***ing amazing outside and I’m feeling rather Spanish hence the title! I also don’t like ‘Beer can chicken’, everybody uses it, so why not be a little different? So what’s so great about a chicken that has been scarred for life? Well, the beer steams up through the chicken and because the chicken is upright, all the fat and un-healthy stuff tend to run off. Everybody has their own taste when it comes to pizza, from the classic margarita to one loaded with different salami’s. It’s a great treat from the takeaway, but it’s so much nicer when made at home. It’s something the kids can easily be involved in making..

It’s summer. And my summer would not be complete without a whirlwind trip Stateside to visit with family + friends and soak up some gorgeous hot sun! This year, myself and the little farmer travelled over the pond alone as the farm is very busy and Richard cannot be spared for even one day. We hope he will join us for a week before we leave because 1. we miss him and 2. he needs a break!

Last week the hubs phoned to say they had cake in work as someone was leaving. As they were eating his colleagues enquired as to whether I could send in some more treats as it had been a while since they had enjoyed my brownies. Ever the dutiful wife I obliged and on Thursday whipped up a batch of individual cheesecakes for them. Now this recipe could very well be made in one large springform tin but I thought individual portions would be easier to share out in an office and I had seen similar from Donal Skehan in the latest issue of Food & Wine Magazine, and also from An American in Ireland, as well as other food magazines recently. Value is a bit of a challenge to me. Does it just mean cheap (sorry, inexpensive)?
Value is “the worth of something compared to the price paid”, and the worth is judged by the buyer not the seller. So, if it’s mentioned anywhere other than a review, I’m a little suspicious. Continue reading »

As one of my regulars, I’m now managing to get this served up in well under the half hour mark. You can chop and change what you like. Pesto is a simple, yet tasty dish on its own, or you could serve the trout with some baby potatoes and the salad, or the salad only, again, all easily put together in a very short time. the ever reliable Fenns Quay this week. This good value menu, even better now since
the VAT reduction, includes mostly local food, such as spiced beef, and the
menu card itself is “spiced “ up with some local lingo.

There’s plenty of places where an unimaginative display of cold quiche and lasagna, ready to be bunged into a microwave at a moment’s notice and served with a dull broccolli and feta salad, strikes a predictable deadness in our hearts. I can't tell you how much I was excited when Hester asked me to guest post on Alchemy in the Kitchen. I adore Hester's blog, as she has such a knack of enchanting us with her fabulous dishes that have all been given her touch of magical creativity. Don't you also love Hester's sense of humour? I particularly love getting to the main photograph, when she injects her Irish wit with wonderful one-liners such as: "does my bun look big in this?" and "Well, I did tell you that drizzle was forecast". Speaking of drizzle, that is something else we both have in common apart from food. Being Irish and Scots lasses, we certainly know what it's like to be prepared for northern summers: a typical blustery June day could start T-shirtingly sunny and end with a Damartingly snow flurry. Oh, and we also chat a lot.What on earth was I going to pick as a recipe? Time for some inspiration.
