Piemonte in north west Italy has bags to offer the curious wine drinker. It is probably the most developed wine producing region in Italy, largely thanks to its influence from neighbouring France.

I’ve had a bag of dried carrageen moss, in the press, for the past year. A friend of my late aunts, from Donegal, gifted me with it, as I had mentioned that I had never used it before. Then last summer, while holidaying in Cork, Diarmuid and I had the most glorious dinner at Ballymaloe House and there, on the dessert trolley, was a large crystal bowl filled with carrageen moss pudding.  Continue reading »

Over the years, several strange gifts have appeared on my doorstep. Once, just after moving into a new home, the doorstep vanished under a stunning 12ft Christmas tree … I took an educated guess and reciprocated with homemade mince pies.
Less delightfully… on a stormy Hallowe’en, I went to answer a loud knock at the door. There, glowing eerily in the darkness, was a large, elaborately carved Jack-O-Lantern, complete with flickering candle.  Continue reading »

Following three new studies, it has emerged that imidacloprid, one of the world’s most widely used pesticides, is the most likely cause of Colony Collapse Disorder (CCD), where bees abandon their hives en masse. But does it happen in Ireland?

Actually, I’m going on a bit of a world trip, taking in three weeks in Japan, a month in Borneo, a few days in Singapore, a month in Australia, six or so weeks in New Zealand, and ten days in Fiji to cap it all off. The Ancient Greeks knew it as Oenotria, or ‘land of the trained vines’. It was in fact the Ancient Greeks who brought wine to Italy, but it was the agricultural and engineering brilliance of the Romans who brought it so many steps further. Not only are they responsible for bringing vines to far off lands, but they harnessed technology to produce the kind of wine we enjoy today.

Fresh Fennel Recipes

How do you like to eat fennel? Do you make a gratin? Or add if to the potatoes before you cook them to make mashed potatoes? Or do you juice it? Here are a few suggestions…
Fennel is lovely eaten raw if you slice it super fine and dress with lemon juice, olive oil and salt and pepper. Chill for 10 minutes before serving to give it extra crunch. Delicious with fish, chicken, or baked potatoes. See recipe below.  Continue reading »
