As a food blogger, I am always interested to see what people are cooking. Vegetable crisps and fritters seem to be really popular online, at the moment. Courgettes have been featuring alot as they are plentiful and in season right now. I looked at a few different recipes and adapted my own based on the flavours I like. I made my courgette chips covered in delicate panko breadcrumbs and parmesan cheese and served them with a creamy homemade garlic mayonnaise. Continue reading »

It was just about lunch-time when we arrived in Pat Shortt’s Bar in Castlemartyr last Saturday. The place was packed inside. Luckily, there were seats in the outside area by the local river, the Kiltha, and so, for the second time in eight days, we dined al fresco in Ireland!

Excited? Me? Possibly. We’re off on our summer holidays today, hip hip hip hooray! To Croatia, sailing to be precise. When I say sailing I use the term loosely as I plan to be spending the time sun bathing (turning a lovely shade of red) and catching up on my reading. I’ve a tonne of books. I can see the glares from Mr. Moustache already if we’re over the baggage allowance at the airport, whoops. And it’s thirty three degrees over there. Continue reading »

How to Make Omelettes in a Bag

I’ve seen some creative cooking before, but nothing that involved a plastic bag. If there’s one upside to this recipe, it’s that there’s no dirty pan to clean! More eating, less cleaning-that makes me a fan.
Ingredients:

This soup is just the trick. It’s pretty but still comfort food and everyone from kids to indigestion-ridden granddads love it. This salad is a looks beautiful on your plate and is totally delicious – it’s a huge hit in Organico Café. My favourite part of it is the Green Goddess Dressing, the name comes from a mayonnaise and sour cream laden dressing originally made in the 1920 in San Francisco, this is a very different version using avocados, much lighter, tastier and nowhere near the calories! – don’t be put off by having to get out the blender, it really is worth it. A perfect brunch. Irish scones, with a warm crust, straight from the oven, fluffy on the inside and salt rich with seaweed. On the side a golden mess of rich creamy scrambled eggs.
Good scrambled eggs are surprisingly rare to find when eating out. Such a simple dish invariably ends up a rubbery, overdone disappointment when served on the plate. For me, there is only one way to cook scrambled eggs and that is s-l-o-w-l-y…. cooked on a low heat, with a little butter. Continue reading »
