On the road from Sneem (Co. Kerry) to Moll’s Gap, there is a place called A Strawberry Field where you will find Pancake Cottage, which is open all year round. The views from the garden are splendid but not so last Saturday as the rain was coming and going.

I am always wary when I make a classic dish like chili as there are a lot of chili aficionados out there, who probably have a lot to say about the exact ingredients that go into a true chili con carne. Irish Cream Pavlova

I made this for Richard’s birthday about a fortnight ago. He is mad for meringue so I surprised him with a special pavlova that he could have all to himself. Instead of topping the crunchy-on-the-outside-soft-on-the-inside bowl of sweet and light eggwhite delight with traditional fruit and berries, I decided to go with an Irish Cream whipped topping, and finished later with white chocolate curls scattered over the top before the big celebration. There’s a hamper of Irish treats for grabs over on the WorldIrish website. Bags of Tayto and Banshee Bones (surely one of the most quintessentially Irish snacks), Cadbury’s Curly Wurlys, and Chef ketchup sit alongside some very 1980′s packets of soup and – ugh – Club Milks. The hamper is provided by Foods of Éire.

If you have a blender you can make this popular shake at home anytime of year. If you’re more of a visual learner, we even created a how-to video.
Ingredients:
-3 C. vanilla ice cream
-1 1/4 C. milk, 2% or whole
-1/4 tsp. mint extract
-4 drops green food coloring

It’s been a while.

Just a little note to say that i am still around and will be cooking up some new items in the coming weeks, as well as having a good play around with some ideas.
The last few weeks have brought a lack of internet, isn’t it odd how we rely on it so much now and a busy time at work. However after a huge catch up and clear out i am back up and running and ready to get a good plan under way for the year.
